Super easy! Use a store-bought pie crust (or make your own), roll out and cut into quarters (so you have 4 triangles), add a Tablespoon of your favorite Cedar Spring Farm Jam in the middle, fold over the crust and crimp the edges with a fork. For a nice presentation, brush on an egg wash and sprinkle some coarse sugar on top. Bake in a 400 degree preheated oven for 14-17 minutes or until golden brown. Wait 10-15 minutes before eating! Jam filling will be hot!
Or even easier: Make a Jam Galette. Use a store-bought pie crust (or make your own). Unroll and place pie crust on a cookie sheet lined with parchment. Add 3/4-1 cup jam and spread to about 1 1/2 inches from edge. If you want, sprinkle with nuts or chocolate chips (yummy with raspberry jam). Fold up edges as shown, brush an egg wash on the edges and sprinkle with sugar. Bake in a preheated 375 degree oven for about 25 minutes or until golden brown. Cool at least 10 minutes.

I’ve also been trying out some new recipes for candy which I hope to have available at the Farmers Markets. This week I made four different types of fudge. It’s not quite traditional fudge, but I think it’s pretty good!

I finally got my garden cleaned up, well at least mostly cleaned up. I’m going to be changing the configuration a bit. I took out several old raised planters and will be putting in some new ones. In the meantime everything is covered up until March or April.
I’ve been experimenting with making candy and hope to have something ready for the farmers market season. I’m also trying out some new recipes for jam and a couple of marmalades – I will let you know when they are available!

Today I delivered jam to Oak Harbor and what a gorgeous drive!! From Anacortes the drive includes crossing Deception Pass Bridge (a marvel of engineering in itself!) which connects our Fidalgo Island to Whidbey Island. It was a reminder of how thankful I am to have landed in the beautiful Pacific Northwest!!
