March 14th is Pi Day! My favorite way to celebrate? Eat pie!! Don’t have one? Well, I have some ideas for you:
Make a cherry cream cheese pie. For this one I used a store-bought graham cracker crust. If you have time, make your own! It’s even better. Here’s the recipe:
Super easy! Use a store-bought pie crust (or make your own), roll out and cut into quarters (so you have 4 triangles), add a Tablespoon of your favorite Cedar Spring Farm Jam in the middle, fold over the crust and crimp the edges with a fork. For a nice presentation, brush on an egg wash and sprinkle some coarse sugar on top. Bake in a 400 degree preheated oven for 14-17 minutes or until golden brown. Wait 10-15 minutes before eating! Jam filling will be hot!
Or even easier: Make a Jam Galette. Use a store-bought pie crust (or make your own). Unroll and place pie crust on a cookie sheet lined with parchment. Add 3/4-1 cup jam and spread to about 1 1/2 inches from edge. If you want, sprinkle with nuts or chocolate chips (yummy with raspberry jam). Fold up edges as shown, brush an egg wash on the edges and sprinkle with sugar. Bake in a preheated 375 degree oven for about 25 minutes or until golden brown. Cool at least 10 minutes.
