Last day of our February Month of Recipes and today I made Lemon Cupcakes with Raspberry Jam. This recipe puts our jam in the center of the cupcake. During cooking the jam tends to fall to the bottom of the pan, so when you pop them out of the pan you may have an issue with the jam sticking to the pan (no worries, though the glaze will cover it!). If you use cupcake liners that won’t be an issue.
