Loganberry Frosted Cupcakes

My niece Jenny made these yummy cupcakes frosted with a Loganberry Jam whipped cream frosting.

The Frosting Recipe:

I Cup Whipping Cream  3 Tablespoons Sugar  1/3 Cup Loganberry Jam

Stir jam in a small bowl – set aside.  Using a cold mixing bowl, beat whipping cream and sugar until stiff peaks form.  Fold jam into whipped cream.  Frost cupcakes – store in the refrigerator.
