Our Sunshine Marmalade can brighten up an overcast, wintery day! My favorite taste of Sunshine is on a toasted bagel with cream cheese, but a close second is Sunshine Chicken.
Brush chicken with olive oil (I like to use “blood orange” olive oil available at Anacortes Oil and Vinegar Bar) and season with pepper, salt and chopped rosemary. Bake covered for about 40 minutes*. Remove cover and spoon Sunshine Marmalade on chicken. Bake uncovered for 10 minutes more or until done. Serve with rosemary honey carrots and rice.
*Adjust time as needed depending on chicken pieces used.
For rosemary honey carrots: slice carrots and steam or cook in water until just tender. Drain and return to pan. Add about a Tablespoon of honey and chopped fresh rosemary to the carrots and stir well.
