Marmalade Chicken Stir-Fry

This is a great way to use our Brandied Mandarin Orange Marmalade.  Pick whatever veggies you like best (I used carrots, onion, broccoli and red peppers) and serve over rice or quinoa.  I used a low sodium chicken stock and low sodium soy sauce, and it needed a little added salt.  I think if use regular chicken stock and soy sauce you won’t need to add any.  I also added 1/2 cup of pineapple tidbits (’cause I like pineapple!)
