Last night the snow was supposed to arrive in Anacortes at 11pm. I waited up – it came later. Not a lot, but enough to create a winter landscape. Here’s the view out my front door:
With the arrival of the snow, I thought I should bake something. Something easy and sweet: an Apricot Galette. I still had a refrigerated pie crust left over from my last open house (do you use these prepared crusts? They come 2 to a package and it always seems like I have one left over!). Using a ready made crust, it takes about 4 minutes to prepare: Roll the crust flat on a piece of parchment placed on a baking sheet. Spread about a cup of jam (I used Apricot Jam, but use whatever fruit jam you have on hand) onto the pie crust leaving an inch and a half border all around. Whisk an egg with a tablespoon of water and brush along the edge. Fold the border up over the jam. Brush the egg mixture along the edge and sprinkle with sugar (I used turbinado sugar). Top with almonds (optional) and bake in a preheated 375 degree oven for about 25 minutes. Cool at least 10 minutes and serve:You can also make these in an individual serving size like the ones below. Then everyone can pick their favorite jam! I probably don’t have to say it, but a small scoop of ice cream on top is really good!
