Here are some pictures from Friday night’s Anacortes Art Walk. Jenny hit traffic driving up from Vancouver, so we missed the tree lighting, but we did get pictures of the “tree”. Where else but Anacortes would you find a two story tree made out of crab pots?!! It’s hilarious and I love it!
Saturday night we went to see the Anacortes Community Theatre’s production of “The Best Christmas Pageant Ever”. It was really good!
While Jenny was here, I wanted to try a couple of recipe ideas: cornbread with pepper jelly and puff pastry with jam and brie. I had a cornbread mix and we made mini cornbread muffins with pepper jelly, some with tequila pepper jelly and some with blackberry chipotle jam. I just prepared the mix, filled the mini muffin tins about 1/3 full, topped with about a 1/2 teaspoon of jelly or jam and added more muffin mix on top. While all the muffins were good, the pepper jelly flavor came through the best! The tequila pepper jelly didn’t add enough flavor and we couldn’t really taste the chipotle in the blackberry chipotle corn muffins. These corn muffins were excellent served with chili.
A couple of weeks ago I saw a recipe online for puff pastry turnover with jam and brie. I made a version this morning with brie and apricot jam. Oh my goodness, they are good!
